Sweet Potato Fries

These fries are baked in the oven and not deep fried, making them even more nutritious than they already are. Sweet Potatoes are high in fibre, vitamin A & C and iron.

Serving Size: 4

Ingredients:

2 large sweet potatoes

2 tbsp of oil (veg or olive oil)

pinch of kosher salt

Freshly cracked black pepper

1/2 tsp of garlic powder/salt

few dashes of cayenne pepper

few dashes of celery salt

Directions:

Step 1: Preheat an oven to 450 F. Whatever baking sheet you are using, pop it in while the oven is preheating. This gives the fries a nice crust when they hit the pan.

Step 2: Peel sweet potatoes. You can leave the skins on if you prefer, just give them a good scrub before hand. Divide the potato into thirds, width-wise. Cut each third into half, then slice into fries. Add to a large mixing bowl

Step 3: Mix together in a bowl the oil and the spices. Pour over the potatoes and mix well.

Step 4: Once the oven is up to 450 and the pan is well heated, take the pan out of the oven and add the sweet potatoes. The fries will sizzle which is good!! Arrange over the sheet so no fries are over lapping. Bake for 30-35 minutes, checking halfway through to flip the fries.

Step 5: When cooked, place fries in a bowl with paper towel. Serve hot.

Serve with Curry Mayonnaise, Cilantro Lime Mayo, or Spicy Chili Mayo.
