Cinnamon Rolls

Very simple yet extremely delicious! Thanks to Carolyn Sullivan and her mom Linda Barker for introducing me to this yummy recipe.

Serves 12

Ingredients:

Dough:

2 cups of all purpose flour

2 tbsp of white sugar

4 tsp of baking powder

1 tsp of salt

1/4 cup of cold butter

1 cup of cold 2 % milk

Filling:

1/3 cup of butter

1 cup of packed brown sugar

3 tsp of cinnamon

Directions:

Step 1: Preheat the oven to 375F. In a stand mixer (or in a large bowl), sift together the flour, sugar, baking powder and salt. Add the butter and with the paddle attachment with the mixer on low, blend the ingredients together until you get a coarse mixture. Slowly add the the cold milk and mix for 30-45 seconds.

Step 2: Turn the dough onto a floured surface and make a large rectangle, approximately 12 inches long and 1/3 inch thick.

Step 3: In another bowl, mix the filling - adding the butter, brown sugar and cinnamon together.

Step 4: Take a large muffin tin (12 count) and grease with butter. Add 1 tsp of the filling to each muffin hole. Take the rest of the filling and layer it onto the dough, creating an even layer all over the dough.

Step 5: Roll the dough from one side until you've made a log. Measure out 12 even slices with your knife - making a slight indent in the dough. Then cut your dough into rolls and place each roll in each of the muffin tin. Bake for 18-20 minutes. Remove from oven and let cool. ENJOY!
