Quesadillas

These are the easiest and quickest veggie snack. Add whatever you have on hand not necessarily what is said in this recipe. A lot of people like to add cooked chicken or steak too.

Ingredients:

1 garlic clove, minced

1 cup of red & green pepper, chopped

1/2 medium onion, diced

1 green onion, chopped

a few pickled/jarred jalapeños, chopped up

whole wheat flour tortillas

salsa & sour cream, for serving

shredded marble cheese (mix of cheddar & mozzarella)

olive oil

Directions:

Step 1: In a frying pan, over medium heat, add a little olive oil and let it heat up. Add the red and green pepper, onions, garlic and jalapeño. Let it cook for a few minutes then remove from pan.

Step 2: In the same frying pan, add one tortilla, place a little bit of cheese, then put on the vegetable mixture, then a little more cheese. This makes the tortillas stick together. Add another tortilla on top.

Step 3: Cook on both sides, until golden brown. I press down on the quesadilla to make sure they are really stuck together.

Step 4: When finished cooking, remove from the heat and slice like you are cutting a pie. Serve with sour cream and salsa.

Cilantro Quesadillas:

These contain pretty much the same ingredients as the previous recipe except I added some broccoli to stir fry with the other veggies. I add some chopped cilantro when I was layering the cheese & veggies. Cook the same and serve.
