Steak Quesadillas

Leftover BBQ steak? Slice it thin, stir fry with some veggies and you have yourself a yummy, hearty quesadilla!

Serves 1

Ingredients:

2 large flour tortilla (I always use multi-grain/whole wheat/ancient grains)

1/2 cup of minced onion

1/3 of a green, red and yellow bell pepper, chopped

1 large clove of garlic, minced

leftover BBQ steak (I always use Striploin, seasoned with Worcestershire sauce, pepper & steak spice), cut into thin strips

1 cup of marble cheese, shredded

salsa, to serve

Directions:

Step 1: In a large frying pan over medium heat, add 1 tbsp of olive oil and let it heat up. Once heated, add the onion and bell peppers. Season lightly with salt and pepper.

Step 2: Saute the veggies for 3-4 minutes. Add the sliced steak and garlic. Mix around and cook for another minute or 2.

Step 3: Scoop filling into a bowl. Using the same frying pan over medium heat, add a touch of olive oil. Lay one large tortilla down, add half the shredded cheese, all the filling, making sure you spread it out evenly. Add the rest of the cheese and then the other tortilla on top.

Step 4: Fry tortilla for 3-4 minutes, or until golden brown, then carefully flip the quesadilla, frying the other side for another few minutes until golden in colour .

Step 5: Remove quesadilla to a wooden cutting board. Let it cool for a few moments before slicing it into 8 "pizza" shaped pieces. Serve with your salsa of choice and enjoy.
