Fried Rice

This is a really simple, delicious recipe. My cousin first made this for me on her wedding day. Great breakfast! The ingredients don't have to be exact, but rather whatever you have in the fridge that needs to be used.

Serving with a lime wedge is a must for this dish.

Serves 4

Ingredients:

3 cups of day old cooked rice

1 tbsp of vegetable oil, you may need extra

small cut veggies like: carrots, onion, cauliflower, green onions, etc

1 egg

2 tsp of soy sauce

1 tsp of red pepper flakes

black pepper

lime wedges

Directions:

Step 1: In a large frying pan over medium heat, add the oil. Saute the veggies for a few minutes, then add the rice, coating it. You may need to add some more vegetable oil.

Step 2: Stir around the rice, making sure it's all getting heated through. Make a little well in the centre of the mixture and crack the egg. Season with black pepper and red pepper flakes. Stir around, combining the egg into the rice mixture.

Step 3: Add the soy sauce and mix around. Taste test. It may need a little more soy sauce.

Step 4: Divide into plates and serve with lime squeezed on top.
