Roasted Sweet Potatoes

Sweet potatoes are a nice switch up from white potatoes. These little nuggets are roasted until just crispy on the outside and soft inside. Recipe inspired by this recipe.

Serves 4

Ingredients:

2 large sweet potatoes, peeled and cut into 1 inch discs

olive oil

1 & 1/2 tbsp of brown sugar

1/4 tsp of garlic powder,

1/8 tsp of each of cumin, celery salt, black pepper, cayenne pepper and chili powder

Directions:

Step 1: Place cut potatoes in a large pot and cover with water. Bring to a boil and cook for 10 minutes. Drain.

Step 2: On a large baking sheet, place some parchment paper down and evenly space out each chunk of potato. Let cool for 15 minutes.

Step 3: Preheat the oven to 375F. In a small bowl, mix together the seasonings for the sweet potatoes.

Step 4: With your hands or something flat, slightly flatten each piece of potato. Brush each top with olive oil. Sprinkle each piece with some seasoning.

Step 5: Bake potatoes for 15-20 minutes. Take out of the oven and gently flip each piece. Brush each top with olive oil and add the remaining seasonings. Bake again for another 15 minutes, or until slightly crispy. ENJOY!
