Quinoa Salad

Quinoa is a grain that is very similar to couscous. It's very healthy and can be used so many different ways like this simple salad.

Serves 4-6

Ingredients:

1 cup quinoa

2 cups of water

1 red bell pepper, chopped

1/2 cup red onion, chopped

1 cup of crumbled feta

large handful of cilantro (chopped, roughly 3/4 cup)

zest and juice of 1 lemon

salt and pepper

3 tbsp of extra virgin olive oil

salt and pepper

Directions:

Step 1: In a pot add the quinoa and 2 cups of water; stir together. Bring to a boil for 2-3 minutes, then decrease the temp to low and place a lid on the pot. Turn off the heat after 15 minutes. Let the quinoa absorb all the water for another 5 or so minutes.

Step 2: In a small bowl, mix together the lemon juice, olive oil and season with salt and pepper. Place the warm quinoa in a large bowl and pour the lemon mix over the quinoa and mix.

Step 3: Let the quinoa cool before adding all your veggies.

Step 4: When cooled, add the chopped red pepper, red onion, crumbled feta, lemon zest and cilantro to the bowl as well.
