Ingredients: 3 Boiled egg, chopped fine 1/2 large onion, minced very fine 1/2 Green Pepper, minced 1 rib of celery, minced 1/3 of large Velveeta cheese brick (150 g), cut into cubes 6 Baking potatoes Directions: Step 1: Bake potatoes in the oven at 350 F for 45 minutes. Boil eggs and reserve. Step 2: Cut potatoes lengthwise down the middle, and let cool for 10-15 minutes. Scoop out the potato filling into a large bowl, and reserve the skins. Step 3: Add the rest of the ingredients, and mix to combine. Season with salt and pepper. Stuff each potato, over filling the potato skin. Place on a baking sheet, placing each stuff potato close to one another so they won't fall over. Step 4: Bake 350 F for 25 minutes, until the cheese is melted and the potatoes are golden brown. |
