Grilled Veggies

This is such an easy way to eat your veggies. You can grill these on your indoor or outdoor grill. If using an outdoor grill, a BBQ pan with holes in it is needed. This way the veggies aren't lost through the main grill.

Ingredients:

1 red, green, yellow and orange bell pepper, cut into thick strips or chunks

1 large white or vidalia onion, sliced into strips

1/2 head of garlic, peeled

3 tbsp of olive oil

salt and pepper

red pepper flakes

juice of 1/2 a lemon

Directions: 

Step 1: Preheat your grill to medium-hi heat. 

Step 2: In a bowl, mix together the olive oil, lemon juice, few pinches of red pepper flakes and season with salt and pepper.

Step 3: In a large bowl add the vegetables and pour over the olive oil mixture. Mix together well.

Step 4: Add everything to the grill and even out all the veggies so they cook evenly. Watch to see that they don't burn, turning them every few minutes. They should take roughly 10 minutes to cook. Make sure the bell peppers still have a crunch to them.
