Chewy Ginger Cookies

Makes roughly 40 cookies

Ingredients:

3/4 cup butter, room temperature/softened

1 cup of white sugar, plus 1/2 cup extra

1/4 cup of molasses

1 egg

2 cups of flour

2 tsp of baking soda

1/2 tsp of ground ginger

1/2 tsp of cinnamon

1/4 tsp of salt

Directions:

Step 1: Preheat your oven to 375F.

Step 2: In a mixer or in a large bowl using a hand mixer, cream together the butter, sugar and molasses until smooth.

Step 3: Add the egg and beat until smooth.

Step 4: In a large bowl sift together the flour, baking soda, cinnamon, ginger and salt.

Step 5: Add the dry ingredients into the wet ingredients until mixed.

Step 6: Place 1/2 cup of white sugar into a bowl. Take a piece of dough and roll it with your hands to form a ball, roughly the size of a walnut. Roll the ball into the sugar and place on a baking sheet. Do this with the remaining dough, leaving 2 inches between each ball.

Step 7: Bake for 8 minutes, or until golden in colour and cracks have formed over the cookie.

Step 8: Remove cookie with a flipper and place on a cooking rack.
