Cranberry Chicken

A very simple, quick dish when you don't have a lot of time to cook! The cranberries and BBQ sauce together form a delicious sweet-and-sour flavour.

Serves 4

Ingredients:

4 boneless chicken breasts, cut into large chunks

4 tbsp of olive oil, divided

3 sticks of celery, chopped

1 onion, chopped

1 cup of BBQ sauce (suggestion: Diana's Gourmet Original BBQ Sauce)

1 can of whole cranberries in sauce

salt and pepper

Directions:

Step 1: In a large frying pan over medium heat, add 2 tbsp of olive oil. Add the cubed chicken, season with salt and pepper and brown. Continue to flip chicken pieces until browned on all sides, 5-9 minutes. Transfer to a bowl and reserve.

Step 2: In the same frying pan, add the other 2 tbsp of olive oil, celery and onion. Season with a pinch of salt and pepper, and saute for 5 minutes. Add the chicken pieces back to the pan. Pour in the BBQ sauce and cranberries. Reduce the heat a little. Place a top on the frying pan and cook for another 15 minutes.

Serve with veggies, rice or potatoes.
