Pancakes

This recipe is adapted from Martha Stewart. These pancakes on their own are great, but add chocolate chips or blueberries for something fun!

I use 1/2 cup measurement for these pancakes which equals out to 4 large pancakes.

Ingredients:

1 cup of all-purpose flour

2 tbsp of white sugar

2 tsp of baking powder

1/2 tsp of salt

1 cup of 2% milk

1 egg

2 tbsp of vegetable oil

1 tsp of vanilla

Directions:

Step 1: Preheat your oven to 200 F. You will use the oven to keep the pancakes warm while cooking the rest.

Step 2: In a bowl, mix together the flour, sugar, baking powder and salt. In another bowl, mix together the milk, egg, oil and vanilla.

Step 3: Mix add the wet into the dry ingredients, whisking together, making sure there are no lumps.

Step 4: In a large frying pan over medium heat, add a little butter, oil or bacon fat. Allow it to heat up and 1/2 cup of pancake mix (for a large pancake). You'll know when to flip the pancake when the pancake starts to bubble all over. Flip the pancake and cook on the other side. Since these pancakes are large, they don't take too long to cook.

Step 5: Put the cooked pancakes in the oven and finish with the rest of the pancake mix, adding a little fat each time. Serve warm.
