Mandarin Beef

The picture below may not be the most appetizing-looking, but trust me, this is definitely a comfort meal to make! I've also tried the recipe in my slow cooker and it works great!! Instead of placing it in the oven, add all the ingredients into your slow cooker, place on High for 4 hours!

Serves 4

Ingredients:

4 cups sirloin steak, cut into thin strips (not expensive meat, can use marinating cutlet, etc)

1 can of cream of mushroom soup, low in fat

1/4 cup soy sauce

3/4 cup water

1 package of dry Onion Soup Mix

2 tbsp cornstarch

2 cups of sliced celery

2 cups of carrots, cut on a diagonal

1 can of mushrooms

Directions:

Step 1: To make the sauce, add the soup, soy sauce, water, onion soup mix and cornstarch together . Mix altogether very well.

Step 2: In a large baking dish, add the celery, carrots, meat and mushrooms. Mix to combine. Pour over the soup mixture, and mix everything together. Bake at 350 F, covered, for 1 1/2-2 hours. Take out of the oven a few times to stir everything together.

*I've also made this in the slow cooker. Make the sauce and then add the beef, carrots, celery and mushrooms. Stir everything together and season with pepper. Add this to your slow cooker. Place on High for 4 hours. Serve with rice.
