Banana Loaf

Don't know what to do with all those frozen brown bananas in your freezer?? Make this easy loaf!

Ingredients:

3 large bananas, mashed to equal 1 cup

1 tsp of baking soda

2 eggs

1/4 cup of margarine or butter

1 cup of brown sugar

1 1/2 cups of flour

1 1/2 tsp of baking powder

1/2 tsp of salt

Directions:

Step 1: Preheat the oven to 350F. In a bowl, mash the bananas with the baking soda.

Step 2: Next, in another bowl whisk the eggs until nice and frothy.

Step 3: In another separate bowl, cream together the margarine and brown sugar until smooth.

Step 4: Add half of the egg mixture to the sugar mixture. Mix well and then incorporate the second half of the eggs. Mix well.

Step 5: Add the bananas to the sugar/egg mixture. Mix to combine.

Step 6: In a large bowl, sift together the flour, baking powder and salt. Add the dry ingredients into the wet ingredients. Make sure the mixture is well combined, but don't over mix it.

Step 7: Spray a loaf pan with cooking oil, and add the banana mixture.

Step 8: Bake for 1 hour. Take it out of the oven and let cool. ENJOY!
