Chocolate Chip Banana Muffins

What to do with those ugly browning bananas? Throw them in the freezer and when you have time make these muffins! Frozen bananas work well with this recipe. Thaw them and then gently squeeze out the insides. Very easy!

Yields roughly 36 mini muffins.

Ingredients:

4 bananas, mashed

1 1/2 cups all purpose flour

1 tsp baking powder

1 tsp baking soda

1/4 tsp salt

1/2 cup sugar

1/2 cup butter, melted

1 tsp vanilla

3/4 cup milk chocolate chips

1 egg, beaten

Directions:

Step 1: Preheat the oven to 350 F. Mash the bananas in a bowl with a fork. Using a stand mixer, add the mashed bananas to the bowl. Add the melted butter and sugar and combine, roughly 30 seconds.

Step 2: Add the egg and vanilla and mix for another 30 seconds. In a separate bowl, sift together the flour, salt, baking powder and soda.

Step 3: With the mixer on low, slowly add the flour mixture to the banana mixture. Mix until just moisten and then add the chocolate chips. Mix to combine, but not too much or the muffins may turn out tough.

Step 4: I use little muffin tins for this recipe, if you have large muffin tins, this recipe will probably only make a dozen. Butter the muffin tin. Scoop a little bit of muffin mixture into each tin, making sure not to fill them completely.

Step 5: Cook for 15-20 minutes until golden brown. Remove and cool on a wire rack.

Alternative Recipe:

Replace 1/2 cup of white flour with whole wheat flour, add a few tsp of ground flax seed, and instead of 1/2 cup of white sugar, use 1/4 cup of white sugar and 1/4 cup of brown sugar.
