No-Bake Granola Bars

We've been on a health kick lately and we needed something to curb our sweet tooth. Found these puppies on Pinterest. Super easy to make, no baking required and they are delish. Recipe adapted from here.
Makes 12 large bars


Ingredients:

2 cups of rolled oats

1 cup of Rice Krispies

1/2 cup of cashews

1/2 cup of dried blueberry infused craisins (Ocean Spray makes these, so yummy)

1/2 cup of brown sugar

1/4 cup of butter

1/4 cup of honey

1 tsp of vanilla extract

1/3 cup of mini chocolate chips

Directions:

Step 1: In a small dry frying pan, add the cashews. Toast for roughly 5 minutes. Take them off the heat and chop roughly.

Step 2: Chop the blueberry craisins. 

Step 3: In a small saucepan, melt together the butter, brown sugar, honey and vanilla.  Whisk until the sugar has dissolved.

Step 4: In a large bowl  mix together the oats, Rice Krispies, chopped cashews, and chopped blueberry craisins. Pour the butter mixture over the dry ingredients and mix well. 


Step 5: Line a 10x10 baking dish with parchment paper. Pour the mixture into the dish. Press down firmly, making the mixture even and compact. Now sprinkle the chocolate chips over the top and press in slightly.  Cover and refridgerate for an hour before cutting into 12 bars.
