Slow Cooker Beef Stew

This recipe is very similar to my classic Beef Stew recipe, however I made a few adjustments to make extra easy for the slow cooker.

Serves 6

Ingredients:

1 1/2 lbs of beef stewing meat, excess fat trimmed

5 cups of potatoes, cut into 1.5 inch chunks

4 cups of carrots, cut into 2 inch chunks

2 celery stalks, cut into 2 inch chunks

2 cloves of garlic, minced

3-4 cups of beef broth *depends on the size of your slow cooker

1/4 tsp each of: dried oregano, basil, summer savory, parsley, thyme, garlic salt

1 tsp of kosher salt and freshly grounded pepper

2 tbsp of softened butter

1 1/2 tbsp of flour

Directions:

Step 1: Dry stewing beef with paper towel. Place beef in the slow cooker along with carrots, potatoes, celery and garlic. Add seasonings. Add enough beef broth to just barely cover all the ingredients. Mix everything together. Place the cooker on High for 6 hours.

Step 2: When there is an hour and a half left, in a bowl mix together the softened butter and flour together with a fork. Place the butter mixture in the slow cooker and mix around. This mixture thickens up the sauce to make a nice gravy.

Step 3: When ready, serve with some homemade biscuits and Enjoy!
