Quinoa with Corn & Green Onions

This is a really delicious crisp summer salad. Serve warm or cold! Recipe inspired by a pin found on Pinterest and also here.

Serves 6

Ingredients:

1 cup of uncooked quinoa

2 cups of water

2 ears of corn

zest & juice of 1 lemon

1/4 cup of butter, melted

1/2 cup of sliced green onions

salt and pepper

Directions:

Step 1: In a large pot, add the quinoa and water. Bring to a boil. Boil for 3 minutes. Turn off the heat, place a lid on the pot and let the quinoa absorb the rest of the water. Should take roughly 15 minutes.

Step 2: Meanwhile, in another large pot add about an inch of water. Bring to a boil. Place the corn in and cook for 8 minutes. Remove and let cool.

Step 3: Once the corn is cooled enough to handle, place the flat end of the corn on a cutting board and run a sharp knife down, cutting off the kernels. Repeat with the other ear of corn.

Step 4: In a large mixing bowl, add the cooked quinoa, corn, green onions, lemon juice and zest and butter. Mix together well. Season with salt and pepper and serve.
