Fruit & Cream Cheese Puff Pastries

Ingredients:

3oz/~94 grams of strawberry cream cheese, softened

3oz/~94 grams of plain cream cheese, softened

2 sheets of puff pastry, thawed (450g)

2 tbsp of white sugar, divided

2 tsp of lemon juice, divided

2 tsp of lemon zest, divided

1 tsp of vanilla extract, divided

1 cup of various fruit, such as raspberries, blueberries, strawberries, blackberries

1 egg

icing sugar for dusting

*2.5 inch diameter biscuit cutter

3 oz/~94 grams of plain cream cheese, room temperature

2 sheets of puff pastry (450 grams total), thawed

2 tbsp of white sugar, divided

2 tsp of lemon juice, divided

2 tsp of lemon zest, divided

1 tsp of vanilla extract, divided

1 cup~Various fresh fruit - blueberries, strawberries, raspberries, blackberries

1 egg

Icing sugar

*2.5 inch biscuit cutter

Directions:

Step 1: Preheat the oven to 400F. While the oven heats, prepare your cream cheese mixtures. In a stand up mixer, beat together just the strawberry cream cheese with 1 tbsp of sugar, 1 tsp of lemon juice, 1 tsp of lemon zest and 1/2 tsp of vanilla extract until nice and smooth. Scoop out onto a bowl, clean the stand bowl and repeat with the plain cream cheese using the same qualities of sugar, lemon juice, lemon zest and vanilla extract.

Step 2: Place each puff pastry sheet on a large baking sheet. Most puff pastry packages have each sheet rolled up in parchment-type paper which you’ll use while baking these pastries. Using a 2.5 inch biscuit cutter, cut out rounds of puff pastry, as many as you can squeeze. Discard the left over puff pastry.

Step 3: Score the puff pastries in a circular manner roughly 1/4 inch from the border. Using a fork, prick the centres of all the pastries.
