Chicken Lettuce Wraps

Have no time or energy to make supper tonight? Take 30 minutes and make this meal!! This is a fun and very healthy way to have a meal.

If you can find Boston lettuce, use it. It's much better than romaine. The coleslaw for the topping of these wraps sounds odd, but believe me, it's delicious!

Serves 2

Ingredients:

1 boneless, skinless chicken breast, cut into very small pieces

2 tbsp of olive oil

salt and pepper

1/2 onion, minced

2 cloves of garlic, minced

2 green onions, sliced

2 tbsp of soy sauce

2 tsp of honey

1/2 tsp of red pepper flakes

juice of 1/2 lime

Toppings:

Boston lettuce

green onions, sliced

cashews, chopped

cilantro

Coleslaw:

2 cups of coleslaw mix

1/4 cup of mayo

1 tbsp of ketchup

pinch of black pepper

Directions:

Step 1: In a large frying pan over medium heat, add the olive oil. Add the chopped chicken and onion; season with salt and pepper. Break up the chicken and continue to cook. When the chicken is almost cooked (5-8 minutes later), add the garlic and green onions. Mix together and let cook for 1 minute.

Step 2: In a small bowl, add the soy sauce, honey and red pepper flakes. Mix and add to the chicken. Coat the chicken and let cook for another few minutes; add the lime juice and mix. Remove to a serving bowl.

Step 3: Meanwhile, when the chicken is cooking, make your coleslaw. In a bowl, add the mayo and ketchup. Season with black pepper and mix. Add the coleslaw mix and stir together. Set aside in the fridge until use.

Step 4: To assemble, take a lettuce leaf, add a dollop of coleslaw, some chicken, few cashew pieces, green onions and a few cilantro leaves. Roll it up and eat!
