Chicken Souvlaki

This recipe is so simple you won't be going out for take-out anymore! Marinate chicken or pork in any marinade you like. I prefer the recipe below, or Bangkok chicken marinade. Let it sit in the fridge for at least 4 hours or overnight for better results. You must soak wooden or bamboo skewers before grilling; dry wood will just burn!

Serves 4

Ingredients:

3 boneless, skinless chicken breasts

1 tsp dried oregano

juice and zest of 1 lemon (zest lemon 1st then squeeze juice last)

1/4 cup olive oil

salt and pepper

3 cloves of garlic, minced

Tzatziki Sauce

Pocketless Pitas or Naan bread

Directions:

Step 1: Cut chicken breasts into 1 inch cubes. For the marinade, in a large resealable plastic bag, add the chicken, salt and pepper, garlic, lemon juice & zest, olive oil and oregano. Mix well and refrigerate for a few hours.

Step 2: Make your tzatziki sauce.

Step 3: Put the chicken cubes on soaked bamboo skewers, and grill on the BBQ, rotating on each side until cooked. *Alternative way of doing the chicken: don't cut into cubes, leave as whole chicken breasts, marinate the same way and cook on the BBQ as whole, if you don't want to do them as skewers.

Alternate Step: For grilled veggies, cut up a red and green pepper and slice up an onion. Toss the veggies with a little bit of olive oil, lemon juice and a sprinkle of salt and pepper. Throw on the grill when the chicken is almost cooked. Veggies should take about 4-5 minutes.

Step 4: To assemble the chicken souvlaki, on a thick flatbread, spread some Tzaziki Sauce, chicken, diced cucumber, lettuce, feta cheese, green and red peppers, red onion or tomatoes. OR if you grilled some veggies, add those with the chicken and some more tzatziki sauce.
