Lemon Roasted Cauliflower

Cauliflower is definitely one of my favourite vegetables. It is so versatile, but on it's own, steamed, it can be pretty boring. This recipe is loaded with flavour. Adapted from Epicurious' recipe Cauliflower with Mustard-Lemon Butter.

Serves 4

Ingredients:

1 small head of cauliflower, cut into chunks (I'd say roughly 4-5 cups, chopped)

salt and pepper

1/2 cup of butter, melted

2-4 tbsp of lemon juice

2-4 tbsp of whole grain mustard

1 tsp of lemon zest

Directions:

Step 1: Preheat the oven to 400F. In a large casserole baking dish, layer the cauliflower. Season with salt and pepper. Roast the cauliflower for 15 minutes.

Step 2: In a bowl, mix together the melted butter, lemon juice, mustard and lemon zest. Pour the sauce over the cauliflower and mix around. Place back into the oven and roast for another 20 minutes, until almost crispy! And ENJOY!

Update: Feb 2019: I make this recipe so often now that I don't even measure any of the ingredients. I go off of how the butter-lemon mixture looks. I definitely add more lemon now. If you aren't big on lemon, try just 2 TBSP at first and if it's not lemony enough, you'll know to add more next time!
