Pulled Pork Sandwiches

Definitely a twist on a classic sandwich. The coleslaw is a must!

Ingredients:

leftover meat from the recipe Brown Sugar & Balsamic Pork Tenderloin

1lb of coleslaw mix

1/2 cup of real mayo

1 tbsp of white sugar

3 tbsp of white vinegar

Ciabatta rolls/buns

Directions:

Step 1: Make the coleslaw first. In a bowl, whisk together the mayo, sugar, and vinegar. Season lightly with salt and pepper. Add the coleslaw and mix together.

Step 2: Heat up a frying pan over medium heat. Add some leftover shredded pork. Fry for a few minutes, then add some leftover sauce and mix together. Fry up for another few minutes.

Step 3: While the pork is heating up, toast your ciabatta buns. Get a large frying pan, place over medium-high heat, add a little bit of olive oil. Cut your buns in half, and place cut side down in the frying pan (when hot). Toast for a minute or 2.

Step 4: Put the sandwich together. Take your buns, on one side add some meat along with some sauce, then top with coleslaw. Easy as that. ENJOY!
