Chocolate Chip Cookie Cheesecake Bars

Found these suckers on good ol' Pinterest, however the recipe belongs to Brandy's Baking. I've adjusted the recipe slightly.

Serves 20

Ingredients:

Crust:

1 1/2 cups of graham cracker crumbs

1/4 cup of melted butter

Chocolate Chip Cookie:

1/4 cup of butter, room temperature

1/3 cup of softened brown sugar

3 tbsp of white sugar

1/4 tsp salt

1 tsp of vanilla

3/4 cup of all purpose flour

3/4 cup of milk chocolate chips

Cheesecake layer:

10 oz (roughly 285 grams) cream cheese, softened

1/4 cup of white sugar

1 large egg

1 tsp of vanilla

Directions:

Step 1: Preheat the oven to 325 F. Begin with the crust. In a bowl mix together the graham cracker crumbs and melted butter. Mix to combine.

Step 2: Take a 10X10 baking dish and butter it. Add the crumb mixture, pushing the crumbs into the dish, making an even crust. Bake for 6 minutes in the oven. Take out of the oven when the 6 minutes is up and set aside.

Step 3: While the crust is cooking, being making the cookie dough. In your stand mixer place your softened butter, brown sugar, white sugar, salt and vanilla into the bowl. With the paddle attachment, beat these ingredients until well mixed, roughly 1 minute. Then add the flour and mix to combine. Then lastly, add the chocolate chips, mix enough just to combine. Place dough in a large bowl and clean the stand mixer bowl.

Step 4: Next, make the cheesecake layer. Place the softened cream cheese in the bowl of the mixer, along with the white sugar, egg and vanilla. Beat on high for 1 minute, or until well mixed.

Step 5: Place the cheesecake layer on top of the crust. Smooth out to make an even layer. Next, place the cookie dough mixture on top of the cheesecake layer. Make sure the dough is evenly distributed. Bake for 30 minutes at 325 F.

Step 6: Take the dish out of the oven when cooked. Let sit at room temperature until cool enough to place into the fridge to cool even further. Take out of the oven and let warm up to room temperature and cut to serve.
