Adam's Home Fries

Adam and I have an on-going battle to see who can make the best breakfast home fries. So far, he has won. His tip is adding 1 or 2 pieces of bacon or ham along with the potatoes and pre-cooking the potatoes in the microwave first!

Serves 2

Ingredients:

2-3 large russet potatoes, cut into evenly sized chunks

1-2 strips of bacon (cut up), or if you have some leftover ham (3/4 cup)

Various seasonings: 1/2 tbsp of Montreal Steak Spice, 1/2 tsp each of black pepper, thyme, basil, garlic salt, and 1/4 tsp of cayenne pepper

Olive oil

Directions:

Step 1: Place cut up potatoes in a large, microwave-safe dish. Cover with plastic wrap or a plate. Nuke the potatoes for 7 minutes.

Step 2: In a large frying pan over med-hi heat, heat up 2 tbsp of olive oil. *If you are using bacon, add the bacon now and allow to cook.

Step 3: Meanwhile, add 1 tbsp of olive oil to the potatoes and add your seasonings to the potatoes. Mix well to combine.

Step 4: When the oil is hot, add the potatoes. Layer them without overlapping. Try not to move the potatoes around a lot. Leaving them in place allows for a nice crust to form.

Step 5: After a few minutes or so, begin to flip the potatoes over, allowing for a nice golden crust on all sides.

Step 6: If you are using ham, add the ham when the potatoes are nearly done. Allow the ham to get nice and crispy.

Serve with eggs and toast!
