Candace's Awesome Guacamole

I was never a fan of guacamole until my lovely cousin introduced me to this style guac! This guac has a creamy texture, with a secret ingredient of sour cream. Yum yum yummmmmmmmm

Recipe courtesy of Chef Candace MacKay-Thomas :)

*Tip: if unsure if your avocados are ripe, make sure they aren't green, but rather a dark-purplish colour. They should be soft if you press them, but not too soft. Hard avocados mean they need more time to ripen. Want a quick ripen-avocado? Place avocados in a paper bag along with half a cut apple; this should speed up the ripening process!

Ingredients:

2 avocados, ripe

1/2 cup of sour cream

3 tbsp of very finely minced red onion or shallots

juice of 1 lime

2 large garlic cloves, minced fine

1/4 tsp of garlic salt

Directions:

Step 1: To cut the avocados, take a sharp knife and run it around the circumference of the avocado. Twist the two halves apart. One side will have a large pip and to get this out, take your sharp knife and hit the pip, twist and release the pip. Scoop out all the avocados with a spoon and mash with a fork until nicely mashed (depending on your preference of texture).

Step 2: Add the red onion, minced garlic, garlic salt and lime juice. Mix altogether. Add the sour cream and mix together.

Serve with Hint of Lime Tostitos and fresh salsa.
