Crispy Roasted Potatoes

I found this recipe while watching Jamie Oliver's Family Christmas special. He is one of my favourite chefs and came up with a really wicked idea for roasting potatoes. For Jamie's original recipe, click here.

Serves 4

Ingredients:

6-8 medium yellow fleshed potatoes

Olive oil & butter

Salt & pepper

Herbes of your choice: basil, oregano, sage, thyme, bay leaf or rosemary (I used freezer dried basil)

1/2 head of garlic cloves, skin left on

Directions:

Step 1: Peel your potatoes and cut into half lengthwise, then cut each piece in half. Run the potatoes under cold water then submerge into a pot of cold water. Bring the potatoes to a boil and then par-cook them for another 10 minutes. Drain.

Step 2: Preheat the oven to 375 F. In a large casserole dish, add 2 tbsp of olive oil and 1 tbsp of butter. Lay the potatoes, flat side down. Season with salt and pepper. Roast for 30 minutes.

Step 3: After 30 minutes, take the potatoes out of the oven and gently push down on the potatoes with a potato masher. Don't mash the potatoes, but make them somewhat flat.

Step 4: Now sprinkle on whatever herb you are using, coating it with the olive oil in the dish. Sprinkle over the potatoes. Add the whole garlic cloves. Pop back into the oven for another 40 minutes or until deep golden in colour and crispy. Serve immediately.
