Pork & Veggies in Oyster Sauce

Ingredients:

1 large head of broccoli, cut into spears

2 large carrots, peeled and cut on an angle

1/2 pork tenderloin, cut into 2 inch strips

4 cloves of garlic, minced

Black pepper

3 tablespoons of Oyster sauce, divided

1 tablespoon of soy sauce

1 tsp of Asian fish sauce

1 tablespoon of water

2 tablespoons of oil

Directions:

Step 1: In a large frying pan over medium heat, add 1 tbsp of oil and allow it to heat. Season pork with fresh black pepper then add to the pan. Coat with oil and allow to cook for a few minutes. Add half of the garlic to the pork and fry until the pork is cooked. Add 1 tbsp of oyster sauce, mix well and remove pork from pan and set aside.

Step 2: To make the sauce, add 2 tbsp of oyster sauce, rest of the garlic, soy sauce, fish sauce, water and more pepper to a bowl and mix well. Set aside.

Step 3: Add the rest of the oil to the frying pan and add the broccoli and carrots. Stir fry for 5 minutes, moving constantly. If you find the vegetables are sticking to the pan, add a little bit of chicken stock or water. When the vegetables are still crunchy, add the sauce mixture. Mix altogether and then add the pork.

Serve over a bed of sticky rice or Chinese noodles.
