Cauliflower Mac N Cheese

I stumbled across this recipe from Jamie Oliver's Food Revolution. Mac N cheese is forever known as a comfort, rich dish. Adding some veggies gives it a nice spin on healthy!

**I've changed this recipe slightly! ~Sept 2014~**

Serves 6

Ingredients:

2 1/2 cups of chopped cauliflower (stems removed)

2 cups of whole wheat macaroni pasta

1 heaping cup of shredded cheddar cheese

3/4 cup of shredded Parmesan cheese

1 cup of light sour cream

1 can of cream of mushroom soup

1/2 tbsp of dried parsley

Black pepper

Directions:

Step 1: Bring a large pot of water to a boil. Add the macaroni and chopped cauliflower. Cook for ~11 minutes, until both ingredients are tender. Preheat the oven to 375 F.

Step 2: Drain the pasta and cauliflower and place in a large casserole dish.

Step 3: In a large bowl, mix together the mushroom soup, sour cream, cheddar cheese, Parmesan cheese and parsley. Season with black pepper.

Step 4: Add the soup mixture to the pasta and cauliflower. Mix to combine. Place in the oven and bake for 20-25 minutes, until golden and bubbly.
