Hometown Classic Spaghetti Sauce

Ingredients:

1 can of Tomato soup

2 cans of tomato sauce, 2 x 680 mL of Hunt's Thick & Rich

1/2 small can of tomato paste, garlic flavoured

2 celery sticks, chopped

1/2 each of green and red pepper, diced

1 large onion, diced

3 garlic cloves, minced

1-2 tsp of red pepper flakes

1/2 tsp of cayenne pepper

1 tbsp of sugar

large handful of freshly grated Parmesan cheese

3 tbsp of parsley

1/2 tsp each of Kosher salt & freshly cracked pepper

1/4 tsp each of garlic salt, oregano, basil, & thyme

1 tbsp of olive oil

*Originally this recipe calls for 1/2 pound each of ground pork and ground beef. Personally, I like this recipe without meat. But if using meat, brown both meats in a large frying pan before hand, drain any excess fat and add to the sauce.

Directions:

Step 1: In a large sauce pot over medium heat, add the oil and allow it to get hot. Add celery, red and green peppers, and onion. Let this cook for a few minutes before adding the minced garlic. Allow this to cook for 5 minutes or so, until the vegetables are no longer hard.

Step 2: Add the tomato paste and mix thoroughly. Turn the heat down to a simmer. Then add the tomato soup and the tomato sauce. If you are using meat, add this to the sauce now.

Step 3: Add to the sauce all of the spices and herbs, including salt, pepper, sugar and the Parmesan cheese. Mix this well and allow to simmer on low for 2 hours.
