Cilantro Grilled Chicken

Ingredients:

4 bone-in, chicken breasts

1/2 bunch of cilantro (leaves and stems)

zest and juice of 1 lime or lemon

4 cloves of garlic

1/2 tsp of salt and pepper

1/2 cup of olive oil or vegetable oil

Directions:

Step 1: Either with a food processor, or using a mortar and pestle, chopped/bash the washed cilantro leaves and stems. Add the garlic cloves and mash too.

Step 2: Add the zest and juice of the lime or lemon, along with the salt and pepper. When the mixture resembles a paste, add the olive oil and mix.

Step 3: Transfer the marinade into a large resealable plastic bag, along with the chicken breasts. Place on a plate and into the fridge for at least 4 hours.

Step 4: Remove the chicken from the marinade and grill on the BBQ. Grill bone side down for majority of the cooking time, finishing off on meat side down.

Step 5: When finished cooking, squeeze some more lime juice on top of the chicken and let rest for at least 15 minutes before slicing.

Serve with grilled veggies and grilled garlic bread!
