Roasted Potato Wedges
4-5 potatoes, any kind
2 Tbsp olive oil
1/2 tsp of dried oregano & cumin
pinch of garlic salt and salt and pepper
Step 1: Set the oven to 425 F and add a dry baking sheet. While you prepare the potatoes, let the oven and pan heat up. Let the pan get hot for at least 15 minutes. Cut potatoes long wedges.
Step 2: When the potatoes are cut, add the spice mixture. Add the olive oil and mix well.
Step 3: Take the pan out of the oven and add the potatoes. The potatoes will sear as soon as you put them on, but this is a good thing - gives the potatoes a nice crust. Put the potatoes back in the oven for 35-40 minutes or until golden brown and cooked completely through.
Try dipping the potato wedges with Cilantro-Lime Dip, Curry Mayo or Spicy Chili Mayo.
