Roasted Asparagus with Feta
1 bunch of asparagus, bottoms trimmed of 1 inch
2 tbsp of olive oil
1 large garlic clove, pressed lightly
1/2 lemon, juiced
salt and pepper
1/2 cup of feta, crumbled
Step 1: In a frying pan over medium heat, add the olive oil and lightly pressed garlic clove. Let the garlic cook for roughly 2 minutes. Take the oil off the heat, discard the garlic clove. Here you have a little oil infused with garlic that you'll pour over the asparagus.
Step 2: Preheat the oven to 400F. Place your asparagus on a large baking sheet. Drizzle the garlic infused oil all over the asparagus. Toss gently. Season lightly with salt and pepper. Add the feta cheese, scattering all over the asparagus. Use half (of the half) of lemon juice, drizzling it over as well.
Step 3: Roast for 12-15 minutes. Take out the oven. Drizzle with remaining lemon juice, serve and ENJOY!
