Fruit Pizza

By no means is this recipe healthy in any way. But it's DELICIOUS!! I have a killer recipe for soft and chewy sugar cookies, that's where the "pizza" part comes in. I only use half the recipe, so this recipe actually makes 2.

Makes 2 pizzas

Ingredients:

1 recipe for Soft & Chewy Sugar Cookies

8oz/250 grams Strawberry Cream Cheese, room temperature

1/2 cup of plain Greek Yogurt, 2% MF

1/4 cup of icing sugar

Assorted fruits for toppings: Blueberries, strawberries, Kiwi, Bananas, Raspberries, etc.

Directions:

Step 1: Follow the directions for the Soft & Chewy Sugar Cookies found here, up to the point where you roll out the dough. Preheat oven to 350F.

Step 2: Flour your working surface liberally. Take your dough and form a ball. With a large knife, cut the dough in half. Working with one half at a time, roll out to form a circle, approximately 1/4 inch thick. Do the same with the other half.

Step 3: Place each "pizza" on a baking sheet/pizza stone. Bake for 8-10 minutes. The cookie should be cooked through but barely brown, just golden in colour. Carefully transfer the large cookie to your serving platter. Set aside.

Step 4: In a stand mixer or in a large bowl, place the cream cheese, yogurt and icing sugar and beat until incorporated, approximately 1-2 minutes.

Step 5: Divide the cream cheese mixture in half. One half per pizza. Layer on the mixture and arrange the fruit decoratively. Serve and ENJOY!
