Broccoli, Carrot & Beef Stir Fry


1 lb of beef, cut into strips

2 cups of broccoli florets

2 cups of sliced carrots

1 red pepper, cut into strips

1 onion, chopped

3 cloves of garlic, minced

1 heaping tbsp of minced ginger

zest and juice of 1 lime

1/2 cup of honey garlic sauce

1/2 cup of water

2 tsp of cornstarch

black pepper

1 tbsp of olive oil, plus extra


Step 1: In a bowl, add the strips of beef, half of the honey garlic sauce and some black pepper. Set aside

Step 2: In a bowl, add the rest of the honey garlic sauce, water, zest and juice of the lime, garlic, ginger and cornstarch. Whisk well and set aside.

Step 3: In a large frying pan over medium-hi heat, add the olive oil and let it heat up. Add the broccoli, carrots and chopped onion. Season with a pinch of salt and pepper. Stir fry for a few minutes, then add the red bell pepper. Stir fry for another few minutes, until tender, but still have a crunch. Remove to a plate.

Step 4: In the same frying pan, add a little more olive oil and add the beef mixture and fry for 3-4 minutes. Add the vegetables to the pan and the sauce mixture. Cook for another 5 minutes, until thickened.

Serve with rice.
