Pasta and Peppers with Feta
Quick and easy vegetarian pasta. Recipe courtesy of Patsi Blaikie.

Serves 8-10
Ingredients:
1 lb of whole wheat rotini * or whatever pasta you have on hand, in the picture above I'm using cracked black pepper fettuccine
1 large onion, chopped
2 cloves of garlic, minced
1 red, green and yellow bell pepper, cut into 1/2 inch chunks
1/2 cup of chopped fresh basil (*when I don't have fresh basil on hand, I use fresh chopped basil in a tube! I use roughly 1 tbsp)
1 & 1/2 cups of crumbled feta cheese
olive oil
salt and pepper
Directions:
Step 1: Cook pasta according to package. Drain and reserve.
Step 2: While the pasta is cooking, in a large frying pan over medium heat, add 2 tbsp of olive oil. Once heated, add the chopped onion and season with salt and pepper.
Step 3: Saute the onion for 5 minutes, then add the minced garlic, along with the bell peppers. Season with pepper and saute for 3 minutes.
Step 4: Add the onions and pepper mixture to the drained hot pasta. Add the chopped basil and feta. Mix to combine. Season with a little more pepper if needed. Serve warm and ENJOY!
Pasta & Peppers with Shrimp:
Same recipe as above, but add 1/2 lb of raw, peeled shrimp. Season with black pepper and some seasoning salt with 1 large clove of fresh garlic. Mix together. Saute shrimp in a frying pan over medium heat with a little bit of olive oil. Cook 2-3 minutes per side, until pink in colour. Remove from heat and add the hot pasta and peppers. ENJOY!
