Lemon Angel Hair Pasta with Shrimp
1/2 lb of angel hair pasta
1 bag of frozen shrimp, peeled, deviened and tails off
1 lemon juiced and zested
4 garlic cloves, minced
1/2 large white onion, roughly chopped
1/4 cup olive oil, plus more for pan
1/2 cup fresh basil leaves, chopped, extra for garnish
Kosher salt and fresh cracked black pepper
Step 1: In a large frying pan, add 2 tablespoons of olive oil over medium-low heat. Add onion and garlic, season with salt and pepper. Cook until onions are translucent, roughly 4 minutes.
Step 2: Cook angel hair pasta in a large pot of salted water.
Step 3: Season raw shrimp with salt and pepper, and add to frying pan. Cook only for a few minutes, until pink. Add lemon juice, lemon zest and basil. Season with salt and pepper. Add cook angel hair pasta and combine everything together. Garnish with more fresh basil.
