Greek Salad
Ingredients:
1 red bell pepper, diced
1/2 of red onion, small diced
1 large English cucumber, sliced in half lengthwise, cut again in half then chopped evenly
1 cup of crumbled feta cheese
2 ribs of celery, diced
juice of 1 lemon
olive oil
1 tsp oregano
salt & pepper
Directions:
Step 1: To make the vinaigrette, place the lemon juice in a measuring cup and add the same amount in olive oil. Season with salt and pepper and add the oregano. Whisk together until mixed.
Step 2: Mix the vegetables in a large bowl and add the feta cheese. Pour the vinaigrette over everything and mix. Place in the salad in the fridge until use.
