Cilantro Lime Chicken Tacos

With the amount of ingredients listed below you're probably thinking this meal is going to take FOREVER, but it's actually not that bad! Mega delicious too.

Serves 2


2 boneless, skinless chicken breasts cut into long "chicken strips", roughly 1 1/2 inches wide

Package of Original Shake n' Bake

4 Whole Wheat flour tortillas

Veggie Salsa:

3/4 cup of an English cucumber, diced small

1/2 cup of minced red onion

2 green onions, chopped

3/4 cup of chopped bell peppers (mixed colours like red and green)

1/2 cup of chopped cilantro

1 clove of garlic, minced

juice of a 1/2 lime

few shakes of red pepper flakes, garlic powder and cumin

Cilantro Lime Sauce:

1/2 cup of real Mayo

2 tbsp of cilantro, chopped

juice of a half a lime

black pepper

Extra Toppings:

1 carrot, peeled & julienned

2 large leaves of Romaine lettuce, cut into strips


Step 1: Preheat your oven to 400F. Take your chicken strips and coat them in the Shake N Bake mixture. Lay out on a baking sheet and bake for 12-15 minutes.

Step 2: While your chicken is cooking, prepare the veggie salsa. In a large bowl add the chopped veggies: cucumber, red onion, green onion, and bell peppers. Add the chopped cilantro. In a small bowl, add the lime juice, garlic cloves, few shakes of red pepper flakes, cumin and garlic powder. Mix together and pour over the veggies. Reserve until use.

Step 3: To make the cilantro lime sauce, grab a bowl, add the mayo, chopped cilantro and juice of half a lime. Season with black pepper and mix.

Step 4: When the chicken strips are cooked, assemble your tacos. Take a flour tortilla, lather on some cilantro lime sauce, add 2 of the chicken strips, some veggie salsa, little bit of carrot and lettuce. ENJOY!
