Creamy Salsa Veggie Wrap

This is by far my favourite wrap. Whenever I don't know what to make for lunch, I turn to this sucker. Add whatever vegetables you have!

Serves 1

Ingredients:

olive oil

1/2 of a red and green pepper, cut into 1/4 inch strips

1/4 white onion, cut into slices

1/2 cup of chopped cauliflower

1 green onion, chopped

1 & 1/2 tbsp of cream cheese

1/3 cup of salsa

2 whole wheat wraps

salt and pepper

Directions:

Step 1: In a frying pan over medium heat, add 1 tbsp of olive oil. Let it heat up then add the sliced onion, cauliflower and bell peppers. Season with a little salt and pepper. Saute for 4-5 minutes.

Step 2: Next add the green onion and saute for another minute. Add the cream cheese and the salsa. With a wooden spoon, break up the cream cheese and incorporate it into the salsa and veggies. Let this cook for another 2 minutes, until the cream cheese has melted and the salsa is warmed. Season with black pepper.

Step 3: Divide the mixture into 2, onto the flour tortillas. Enjoy warm!
