Beer Can Chicken
1 whole chicken (3-4 lbs), gizzards removed
1 can of beer (any kind)
1 tbsp of butter, room temperature
2 garlic cloves, minced
2 tbsp of Blackening Spices, divided
Step 1: Pat dry the chicken with paper towel. Open up the beer, drink half of it. Add butter, the minced garlic and 1 tbsp of the blackening spices. Mix. Prepare the BBQ by heating it to a medium temperature.
Step 2: Using the remaining blackening spices, rub all over the chicken. Sit the chicken on top of the beer car. Put the chicken in the middle of the BBQ, grilling for over an hour, or until the chicken is cooked all the way through, when the juices run clear. Make sure you keep an eye on the chicken to it won't burn. Turn down the heat if the chicken begins to burn. The chicken can take from 45 minutes to 1 1/2 hours to cook, all depending on the size of the chicken and your BBQ.
Step 3: When the chicken is cooked, remove from the BBQ and let sit for at least 10 minutes. Slide off the BBQ can, be careful it still may be hot. Slice chicken and serve.
