Panko Crusted Shrimp
Saw these suckers on an episode of Diners, Drive-ins and Dives. They are a tasty treat for finger food and really good as part as a meal. For the original recipe, click here.
Serves 4
Ingredients:
1/2 lb of raw shrimp, tails removed (31/40 count)
1/2 cup of flour
1 cup of water
1 tbsp of sugar
2 cups of Panko breadcrumbs
Salt and pepper
1/4 cup of oil
Thai dipping sauce, to serve
Directions:
Step 1: In a large bowl mix together the flour, water and sugar. Season with salt and pepper.
Step 2: In a shallow dish, place the Panko breadcrumbs.
Step 3: In a large frying over medium-high heat, add the oil and let it heat.
Step 4: Meanwhile, add your raw shrimp to the flour mixture and coat. Handling one piece at a time (making sure the shrimp isn't dripping wet), coat each shrimp piece in the breadcrumbs. Set aside until use. Do this with the remaining shrimp.
Step 5: Add the shrimp to the hot oil, making sure you don't over crowd the shrimp, fry on each side for 2-3 minutes until golden in colour. Drain on paper towel and serve with Thai dipping sauce. ENJOY!
