Rotini with Shrimp and Tomatoes


4 cups of Cherry Tomatoes

12 cloves of garlic, minced

3/4 cup olive oil

1 tsp dried basil

1/2 tsp salt

1/4 tsp red pepper flakes

1/4 tsp black pepper

bag of uncooked shrimp, deveined & tails removed

1 lb rotini, wholewheat

1/2 cup freshly minced Flat leaf Italian Parsley or basil

Parmesan cheese


Step 1: Mix in a large bowl the tomatoes, garlic, olive oil, basil, salt, red pepper flakes, and pepper.

Step 2: Cook on a baking sheet in the oven for 30 minutes at 400 F. Cook the pasta according to it's package.

Step 3: Season the raw shrimp with salt and pepper. Remove tomato mixture from the oven. Add the shrimp and let it cook on the hot sheet. When the shrimp is cooked, add everything to the cooked pasta. Top off with fresh Parsley and freshly shredded Parmesan.
