Chicken Pita with Creamy Garlic Sauce

Perfect by itself for lunch, or add some sweet potato fries and serve it for supper! Add whatever veggies you have on hand.

*Warning* Do not have this meal before a date...garlic breath is imminent.

Serves 4


2 boneless, skinless chicken breasts, cut into long strips, 1 inch wide

package of Shake N' Bake Chicken seasoning

3/4 cup of real Mayo

1 large clove of garlic

salt and pepper

juice of 1/2 lemon

Whole Wheat pita

Veggies: sliced cucumbers, lettuce, red onion, bell peppers, celery

Feta cheese, crumbled


Step 1: Preheat the oven to 375 F. Take your chicken strips and toss them in the Shake N' Bake chicken seasoning. Place seasoned chicken on a large baking sheet that is already lined with tin foil. Bake the strips for 15-20 minutes, flipping them half way.

Step 2: Prep your veggies while the chicken is baking. Use whatever you have on hand or whatever you prefer! Set it up like an assembly line.

Step 3: Make your creamy garlic sauce. Take your large garlic clove and press it through a garlic press. Place the garlic on a cutting board and place 1/4 tsp of salt on top of it. With a sharp knife, push the salt into the garlic, chopping and pushing as you go. Blend the salt into the garlic, as if you were making a paste. Now place the garlic in a bowl, along with the mayo, lemon juice and add some fresh black pepper. Mix altogether and set aside.

Step 4: Take your pitas and cut them in half. Throw them into the oven for a minute to get warm while the oven is still hot. As soon as the pitas come out of the oven, add some garlic sauce into the pockets of the pitas.

Step 5: Now assemble your pitas. Add the chicken, veggies, feta cheese and a little more sauce. Serve & ENJOY!
