Sweet & Sour Chicken Salad
Ingredients for the Salad:
1 head of broccoli florets
4 cups of baby spinach
3 cups of romaine lettuce
1 green pepper, cut into strips
1/2 red onion, diced
1/2 cup pineapple chunks
Ingredients for the Dressing:
4 tbsp pineapple juice, 1/4 cup of olive oil, 2 tbsp red wine vinaigrette, 1 tbsp of poppy seeds, 2 tsp sugar, 2 tbsp Dijon mustard.
2 boneless, skinless chicken breasts, cut into 1 inch cubes
1/4 cup Catalina Salad Dressing
few tablespoons of BBQ sauce (Diane's Original BBQ is good)
Step 1: To make the vinaigrette, put everything into a jar with a tight seal and shake until evenly incorporated.
Step 2: To make the chicken, in a large frying pan over medium heat at a little bit of olive oil and add the diced chicken breasts, season with salt and pepper. When finished cooking, remove from heat and the Catalina Salad Dressing and BBQ sauce.
Step 3: For the salad, mix all the ingredients together. Add the chicken on top and pour over the vinaigrette.
