Strawberry, Red Onion & Pine Nut Salad


1 package of Spring Mix Salad lettuces

1/2 bag of baby spinach

1/4 red onion, cut very thinly

1 package of pine nuts, roughly 3/4 cup (or use any nut you have on hand, I use cashews too)

5 large strawberries, cut into slivers

1 small yellow pepper, diced

5 large basil leaves, cut into thin strips

Poppy Seed Dressing


Step 1: In a large frying pan, over medium heat, add the pine nuts. Lightly toast the nuts for 2 minutes. Remove from heat.

Step 2: In a large bowl, add the spring mix lettuces, spinach and mix together. Add the slivered strawberries, red onion and chopped yellow pepper. Add pine nuts on top, along with basil.

Serve with Poppy Seed dressing.
