Deconstructed Baked Potatoes

One of my favourite chef's is Jamie Oliver. In his recipe book, Food Revolution, he gives really delicious yet simple ideas for every day items. This is an adaptation of his warm potato salad. These potatoes are great for when you're getting bored of mashed potatoes!

Serves 2

Ingredients:

8 small new potatoes, peeled

2 slices of bacon

zest and juice of 1/2 a lemon

3 tbsp of olive oil

salt & pepper

1 green onion, sliced

2 tbsp of plain yogurt or sour cream

Directions:

Step 1: Place peeled potatoes in a pot, cover with cold water and bring to a boil. Cook potatoes for 15 minutes or more, until cooked through (a knife should go through the potato easily).

Step 2: Meanwhile, place the bacon on a cold frying pan, over medium heat and cook until crisp. Let cool then chop into small pieces.

Step 3: In a small bowl, add the lemon juice and olive oil. Season with salt and pepper - mix well.

Step 4: Once the potatoes are cooked, drain them and place them a large bowl. Right away, pour over the lemon-oil mixture. Toss to coat. Add the green onion, bacon, lemon zest and yogurt. Toss to coat again and serve immediately.
