Super simple but delicious! We've been getting fresh haddock weekly and pan frying it this way. It's by far the best fish I've eaten! If you can get your hands on fresh fish, cook it this way...you won't be disappointed!

Haddock fillets, cut in halfStep 1: Take your cut fillets and dry them off with paper towel to take out any moisture.
Step 2: Place the flour on a large plate. Add the seasonings and mix.
Step 3: In a shallow, longer dish, add the eggs and a splash of water. Whisk together.
Step 5: Take a fillet, dredge it in the flour, coating all sides. Now, dip it in the egg mixture. Let any extra egg drip off (you don't want the fillet soaking wet). Now place the fillet in the breadcrumbs. Push the fish into the crumbs, ensuring all sides are coated. Place on a dish until use. Repeat with the remaining fish.
Step 6: Get a very large frying pan, place over medium-high heat. Add about 1 tbsp of olive oil. Let this heat up. Right before you fry your fish, add about 1 tbsp of butter. Let melt and add your fish. Cook 2 minutes per side, or until golden in colour. Fish doesn't take too long to cook. **Sometimes I may need to add a little more oil after I flip my fish.
Serve with some veggies and a squeeze of fresh lemon and ENJOY!
